Tuna & Chickpea Power Salad 🥗

Ingredients:
1 bag baby salad leaves
2 cans tuna (in olive oil, drained — if in brine, use more olive oil)
1 can chickpeas (rinsed and drained)
100g feta cheese, crumbled
2 cucumbers, chopped
1 handful cherry tomatoes, halved
½ shallot, finely sliced
1 large carrot, grated
Dressing (mixed first in the salad bowl):
2 tbsp olive oil (adjust if tuna was in brine)
1 tbsp balsamic vinegar
1 tsp date syrup (or honey/maple syrup)
Juice of ½ lemon
Salt and pepper to taste
Instructions:
In your salad bowl, mix olive oil, balsamic vinegar, date syrup, lemon juice, salt, and pepper.
Add the finely sliced shallot to the dressing and let it sit while you prepare the rest.
Rinse and drain chickpeas.
Chop cucumbers and halve cherry tomatoes.
Grate the carrot.
Add leaves, chickpeas, cucumbers, tomatoes, carrot, and tuna into the bowl.
Top with crumbled feta.
